A caprese is typically a salad consisting of slices of mozzarella cheese, tomatoes, basil, and olive oil or a certain Italian dressing. Famed for its clean, fresh, and simple ingredients it’s become a go-to salad recipe at any given day.

For my version of a caprese, I remaked the classic salad into a complete dish that is cooked, savory, and very appetizing. This is a perfect, easy-to-cook summer dish that’s sure to make your lunch or dinner extra special!

My kids absolutely loved this dish!

Ingredients:

  • Filleted Chicken Breasts
  • Tomatoes *a few cut in half and some cut in slices
  • Olives *sliced
  • Dried Crushed Basil
  • Salt
  • Pepper
  • 2 cloves of Garlic *minced
  • Olive Oil
  • Toothpicks

Instructions:

  1. Butterfly chicken breasts. Pound it a little bit just to slightly flatten it out. Rub in basil, salt, and pepper on both sides.
  2. For the filling I like to put tomatoes (sliced ones), cheese, and olives. Arrange the filling on one side of the chicken breast as on the photo below. It’s better if you have a mozzarella to use, but a cheddar cheese will do. 

          3. Fold one side of the chicken breast on top of the other and seal with toothpicks.

4. Heat up a pan and using a good amount of olive oil, sear both sides of chicken breast for 3-4 minutes each side. Set aside.

5. Using the same pan, sautee garlic, tomatoes (halved ones), and olives for 1 minute. Put the chicken breast back in, cover, and simmer for 3-4 minutes or until the chicken start to slightly brown.

6. Place cheese on top. Cover and simmer until cheese starts to melt.

7. Transfer and arrange on a plate. Serve and enjoy!
